Weight Watcher's Wednesday...


It is week 3 of WWW and I am still losing. I lost 3 more pounds this week. That means I am at 13 lbs. in 3 weeks. YEAH WEIGHT WATCHERS! I am very excited about this because I have not started adding any exercise into the mix yet, so was afraid I may not have a loss. Remember the Mandi Method, exercise will come in another week or so. Still trying to focus on my eating and make my new habits a lifestyle.

It was a pretty good week, I spent all my flex points on Sunday for the Super Bowl party, but other than that I stayed within my limits pretty easily. This next week will be my toughest one yet. We are gonna be travelling for 5 days, and that always makes it a little harder to control exactly what you eat. No worries though, I can do it! I had planned to start posting a photo of myself every week so I could monitor my progress that way as well, but I completely forgot and I will spare you a picture of me in my jammies this morning. I will WRITE IT DOWN (the only way I remember anything)and get a picture either later today or this weekend and add it to the post.
For this weeks recipe, I have several I want to share, but I am gonna post a couple sweet treats that we like to enjoy around here. I have a SERIOUS sweet tooth, so if you are in the same boat you will love these two.
2 Point Milkshake:

Ingredients:
1 cup of fat-free milk - 100 calories - 2 points
6 ice cubes - 0 calories - 0 points
2 Tbsp of sugar-free fat-free pudding mix - approx. 15 calories - 0 points
1 packet of splenda
Total: 115 calories - 2 points
Directions:
Put all of the ingredients into a blender and blend until smooth. The pudding gives the milk flavor and a little bit of creaminess. This recipe is a fast, 2 point dessert that REALLY fools me into thinking I’m getting a treat. I’ve tried the chocolate, vanilla, and cheesecake flavors. On the vanilla and cheesecake flavors I added a dash of vanilla extract and the cheesecake tastes just like yellow cake batter. That is Lon's favorite! There are so many pudding flavors to choose from, you could have a different milk shake every day of the week!

Grape Salad Recipe:
If you are a church-goer, you have probably had this recipe at a covered dish supper. It is very popular in the South. I actually got this recipe from Lon's cousin Billie Kay a year or so ago and have just modified to make it low fat.
Ingredients:
1 lb. of red seedless grapes (a little more is fine. I usually have about 5 -6 cups when measured out later)
1/4 c fat free sour cream
1 8oz block of fat free cream cheese
1 tsp vanilla extract
1 cup of splenda

Directions:
Rinse your grapes. In a separate bowl, mix all other ingredients until they are creamy. Stir in grapes until well coated. I put it into 6 little gladware containers and eat one at a time. It is about a cup at 2 points each. It is REALLY sweet, but hits the spot for me. In its original form it is topped with crushed pecans, but that makes it significantly more points, so I just leave them off. It is still DELISH!!

I'm so excited that you are loosing girl! I feel like I'm not anymore. So frustrated by it. I think I need to suck back more water and make exercise more intentional. Sometimes I wish I had a scale to track my progress but then I think if I had one and wasn't loosing I would throw in the towel. Sometimes this journey is HARD. I so appreciate the recipes!!!
